Gnocchi

G2

The G2 is a piston-fed gnocchi machine. The machine presses the dough into the die without modifying its structure. PASTA dryers

Dryer EC/NG 25 – EC/NG 200

La Monferrina dryers are available in four models with different capacities and power ratings. All are constructed from interconnected insulating panels designed to eliminate all internal and external heat. The panels are insulated with injected polyurethane and covered with PVC. The internal geometry of the drying cells is designed to maintain uniform airflow, temperature, and humidity, to ensure even drying throughout the process. The drying cells are equipped with a bidirectional ventilation system, electric heating or hot water circuitry, a dehumidification device, and air inlet valves. The entire drying cycle is monitored by humidity and temperature probes. The automatic drying system is equipped with a PLC that allows the optimal drying process to be selected for each pasta format via a touchscreen monitor. An optimal final result is guaranteed by determining the final phase of the drying cycle using a residual moisture measurement.
